Sweet Potato Pancakes

The appearance of sweet potatoes and yams may flummox many, but you will notice the difference if you pay close attention. Yams look like tree bark, while sweet potatoes are more reddish-brown. Although the taste is equally distinctive, sweet potatoes are flavorful and moist, while yams are often starchy and dry.

Sweet potatoes are one of the most versatile and healthy vegetables. Sweet Potatoes are packed with disease-preventing, cancer-fighting, and immune-boosting benefits. Try incorporating sweet potatoes into your cooking; I promise you will feel amazing!

To make you will need:

  • 1 cup all-purpose unbleached flour
  • 2 teaspoons brown sugar
  • ⅛ teaspoon kosher salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup at room temperature homemade vegan buttermilk
  • 1 teaspoon vanilla extract
  • ¼ cup creamy cooked and cooled sweet potatoes, an additional 1 tablespoon
  • 2 tablespoons melted vegan butter, an additional 2 tablespoons for serving
  • Maple syrup for serving

In a medium bowl, add flour, brown sugar, kosher salt, baking powder, and baking soda. Whisk together until combined.

In a separate bowl, whisk together vanilla extract and buttermilk. Pour the buttermilk mixture into the dry ingredients. Fold in creamy sweet potatoes.

Let the batter rest for 5 minutes. In a large non-stick pan, heat over medium-high heat, pour about ½ cup batter. Cook pancakes until the top forms bubbles. Flip the pancake, and cook until golden.

Garnish with creamy sweet potatoes and brown sugar.
Serve warm with maple syrup.
