Easy Cinnamon Rolls (from scratch)

Cinnamon Rolls are delicious for breakfast or a sweet snack.

First, Dissolve the yeast in a small bowl of warm water and set aside.

In a large bowl, mix the milk alternative, 1/4 cup of brown sugar, 1/3 cups of melted butter, and the egg replacement; combine all ingredients evenly.

Add in two cups of the flour and mix until the batter is smooth. Pour in the dissolved yeast into the mixture. Mix in the remaining cups of flour until the dough is easy enough for kneading. 

Grease a large bowl with butter, or coconut oil, and set aside. Knead the dough on a lightly floured surface for 10 minutes. Place the dough in the oiled bowl, cover, and let the dough rise until it has doubled in size. (1-2 hours).

Push the dough down once it has doubled, and roll it out on a floured surface. Roll the dough into a rectangle, about 15X9 in size. Spread about 1/2 cup of melted butter, evenly, coating the mixture. 

Mix 1/2 cup of brown sugar and cinnamon in a small bowl. Sprinkle the mixture all over the butter and dough, end to end. If you are a fan, include walnuts, pecans, or raisins over the top. Beginning at the longest side of the dough, roll, and pinch the dough together to seal.

After rolled, the dough should look like a big, long egg roll. Cut into 12-15 slices, depending on how thick you want the cinnamon rolls.

In a large baking dish, pan or casserole dish, coat the bottom with sugar and butter. Place the cinnamon roll slices, neatly, and snugged together onto the baking dish.

Let the cinnamon rolls set for about 30-40 minutes so that the dough can rise. Place the cinnamon rolls into the oven, bake at 350° for about 25-30 minutes, or until golden brown.

Icing:

  • 4 tablespoons of vegan butter or coconut oil
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
  • 2 cups hot water

 

In a small bowl combine butter, vanilla, powdered sugar, and vanilla.

Add the hot water, 1 tablespoon at a time until the icing reaches the desired consistency, spread the glaze over the rolls. Let the rolls cool before serving.
