Creamy Baked Mac & Cream

This Baked Mac and Cheese recipe is simply amazing. An insane cheesy sauce, turning your baked macaroni and cheese into perfection.

Creamy Baked Mac & Cream

Total Time: 1 hour
Serves: 8-10 servings

You will need:

  • 1 lb. dried elbow pasta
  • 1 cup vegan butter, or 1/3 cup extra-virgin olive oil
  • 1(½ ) cup unsweetened-almond milk, or preferred non-dairy alternative
  • ½ cup unbleached or wheat flour
  • 8 oz. (Pantopia foods cashew or chickpea cream)
  • ½ teaspoon pink salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika
  • ½ teaspoon onion powder
  • 1 tablespoon fresh chives
  • 1-2 cups of seasoned; bread crumbs


Preparation Directions

  1. Preheat oven to 400 degrees F°: oil a thin layer of melted vegan butter in a deep-shallow casserole dish. 
  2. In a large pot of boiling salted water, add elbow noodles. Cook according to pasta packaging instructions, drain pasta.

Cooking Directions

  1. Over medium-hi heat, melt butter in a large skillet. Whisk in flour, paprika, and onion powder. Whisk until the mixture is light brown. 
  2. Gradually, whisk in non-dairy milk until mixture thickens; stir whisk while heating, for 5-8 minutes.
  3. Remove mixture from heat. Stir in 2 cups of cashew cream. Add and stir in cooked pasta; season with salt and pepper, to taste.
  4. Divide pasta mixture into two bowls. Pour in ½  pasta mixture, layering the bottom of the casserole dish, drizzle 1 cup of cashew cream over the first layer of pasta — next, layer, the second half of pasta over the first layer of pasta. Pour, remaining 1 cup of cashew cream, over the second layer.
  5. Place mac & cream in oven and bake for 25-30 minutes, or until golden brown. Remove from oven, after cooking time; sprinkle breadcrumbs over pasta.
  6. Place oven on hi-broil, place mac & cheese back in the oven for about 5 minutes until bread crumbs are toasted and browned. Remove from the oven. Garnish with chives, if desired, and serve immediately. 


Cooking Notes
Make your mac & cheese thicker by adding less water or non-dairy milk. Prepare thinner by adding additional water or non-dairy milk.
